What can I do to calm down before meeting the interviewer?

Always arrive at an construction interview early. Before you go in, try sitting in your car for a few minutes and breathing deeply. Close your eyes and "see" yourself in the construction interview, comfortable, confident, and aware of your construction interviewer and your surroundings. Visualize yourself leaving a successful construction interview. After ten minutes or so, go on in and do your best.
